Cooking times and tips are provided as guidelines and should be adjusted based on equipment and quantities used.
  • Heat one volume of rice in a tablespoon of oil until the grains turn translucent.
  • Add 1.5 volumes of boiling salted water.
  • Cover and cook over medium heat until all the water is absorbed.
  • Pour one volume of rice into five volumes of boiling salted water.
  • Cook for 20 minutes, covered, over medium heat.
  • Drain and enjoy.

The PGI Camargue Rice Duo

The Protected Geographical Indication (PGI) recognizes a unique terroir and ancestral know-how. Camargue rice is an authentic product of local agriculture, available in both conventional and organic varieties.

For its Hériztage Camargue Whole Rice Duo, Provence Factoriz has chosen a base of PGI semi-whole long rice, complemented by parboiled whole long red rice grains.

 

Where to buy a Camargue Rice Duo?

It is entirely possible to purchase a Camargue Rice Duo, as the PGI encompasses both organically and conventionally farmed plots.

The Camargue Rice Duo offered by Provence Factoriz consists of grains sourced from PGI-certified organic farming.

 

What is the difference between whole rice and semi-whole rice, natural and parboiled?

Whole and semi-whole rice have retained part of their protective outer layer, which gives them their natural coloration. Whole long rice has had its initial outer husk, the hull, removed.

To produce semi-whole rice, part of the remaining outer layer is removed.

The optional parboiling step occurs before husking and gives the rice its non-sticky properties during cooking.

 

Camargue Rice Duo: Recipes

With a Camargue Rice Duo, the recipes are the same as with long-grain rice. Naturally, it shines in composed salads, where the contrasting colors of the duo elevate the dish. This product can also be served as a side dish for meats and fish or mixed with vegetables.

For cooking, 20 minutes in boiling salted water is sufficient, using one volume of rice for five volumes of water. For pilaf-style cooking, the duo is prepared just like any other long-grain rice.
